烦恼

前几天和一位已相处了好几年的好朋友谈天。不知不觉也把我的秘密讲出去了。竟然当时已透露了一些,就连一些烦恼也拿出来谈。
她说:“告诉她,要她等会是自私一点。但错过了就没得挽救了。”
过后,我想了几晚,觉得她说得对。但,我心中的确还有许多问号。我曾想过要把所有的“问号”放到一边,可能尝试后所留下的经历可回答那些问号。可是,我还是被那些问号阻挡着。也许阻挡着我的是我自己一些老土的想法吧!

原本我打算读完硕士后才来打算的。但是,我的好朋友也说得对:“好的女生不容易找。”
我也曾问过我的家人,告诉他们我只做出两个选择:
1)继续我的硕士,别的事就过后才打算。
2)不念硕士。
我妈妈说:“硕士大不了也不是一两年。。。就读完先才打算吧。。。”

虽然我已做了决定会读硕士。但是,我还是不知如何处理这件事情。。。

嗨。。。还是过几天再向另一位好朋友拿些意见吧!

心不在焉

咳,最近一个月都不知道干嘛的。明明想要读书,但就是提不起劲来。一直想东想西,担心这样担心那样。一向来不会想那些事情的我,竟然会在这时刻发生在我身上。我知道如果我踏入了那个圈子里后,就很难退后了。但我就是真的放不下,不想失去。
妈妈和姐姐的劝告与提醒真令我难以做决定。很想找个好朋友谈谈帮我做决定,过后又不知该不该说出来,或许心里已知道他们的答案了吧!
写着写着,我也不知如何写下去了。。。

Coffee Ice-Cream

I have made some delicious coffee ice-cream. The coffee that i used is Bustelo Coffee which was actually bought from U.S. My friend, Matthew Ang took all the trouble by taking the whole large box of coffee back from the States. Thanks man!
This is the coffee that i like the most!

Ingredients:
  • 1½ cups whole milk
  • ½ cup caster sugar
  • ¾ cup ground coffee (I personally recommend Bustelo)
  • 1½ cups whipping cream
  • 5 large egg yolks
  • ¼ teaspoon vanilla extract
  • ¼ finely ground coffee
  • pinch of salt
Steps:
  1. Heat the milk, sugar, ¾ cup ground coffee, and salt in a medium saucepan until it is quite warm and steamy, but not boiling. Once the mixture is warm, cover, remove from the heat, and let steep at room temperature for 1 hour.
  2. Pour the whipping cream into a medium size metal bowl, set on ice over a larger bowl. Set aside.
  3. Reheat the milk and coffee mixture, on medium heat, until again hot and steamy (not boiling!). Use a coffee filter or mesh strainer to filter out the ground coffee from the mixture.
  4. In a separate bowl, whisk the egg yolks together. Slowly pour the heated milk and coffee mixture into the egg yolks, whisking constantly so that the egg yolks are tempered by the warm milk, but not cooked by it. Scrape the warmed egg yolks back into the saucepan.
  5. Stir the mixture constantly over medium heat with a heatproof, flat-bottomed spatula, scraping the bottom as you stir, until the mixture thickens and coats the spatula so that you can run your finger across the coating and have the coating not run. This can take about 15 minutes.
  6. Pour the mixture into the whipping cream. Mix in the vanilla extract and finely ground coffee, and stir until cool.
  7. Chill the mixture thoroughly in the refrigerator, then freeze it in your ice cream maker according to the manufacturer's instructions. (Click here to learn how to make ice cream without a machine.)

How to make ice cream without a machine

Steps:
  1. Prepare your ice cream mixture, then chill it over an ice bath.
  2. Put a deep baking dish, or bowl made of plastic or stainless steel in the freezer. Pour your ice cream mixture into it and put it back into the freezer.
  3. After forty-five minutes, open the door and check it. As it starts to freeze near the edges, remove it from the freezer and stir it vigorously with a spatula or whisk. Beat up any frozen sections and return to freezer.
  4. Continue to check the mixture every 30 minutes, stir vigorously as it's freezing. Use a hand-held mixer for best results.
  5. Keep checking periodically and stirring while it freezes until the ice cream is frozen. It will takes about 3 hours to be ready.
  6. Transfer the ice cream to a covered storage container until ready to serve.

Butter Cake


Ingredients:
  • 250g butter
  • 230g castor sugar
  • 4 large eggs
  • 250g self-raising flour
  • 2 teaspoons vanilla essence
  • 6 tablespoons UHT milk
Steps:
  1. In a mixer, beat butter and sugar until white and fluffy.
  2. Add in eggs and continue with the beating. (1 egg at a time)
  3. After that, add in self-raising flour and beat for about 5 minutes.
  4. Add vanilla essence and milk.
  5. If the batter is too hard, add more milk. (1 tablespoon at a time)
  6. Preheat the oven with 180°c.
  7. Pour the batter into baking. Make sure the batter is less than half the height of the baking tin to prevent cracking and burnt at the surface.
  8. Bake for cake for 50 minutes.

Apple Swan

Today i would like to share an interesting way to carve an apple into a swan. Actually, this apple swan was taught by my friend. We carved the swan for the purpose of decorating our dessert of the night.

Thousand Layered Cheese Cake

It has been a while since my last post. Today I have made a delicious Thousand Layered Cheese Cake (Kek lapis). Since people named it thousand layered cake, it is not surprise that it has to be baked layer by layer. It took me about 4 hours for the cake to be completed. In the end, the layer of the cake was not so obvious and it seems to be over baked, making the cake a bit too dry instead of moist. However, I was satisfied with the cake even through it is so troublesome for baking it layer by layer. Now, I would like to share my recipe here. I will update the recipe if i found another better recipe... Enjoy!



Ingredients:
  • 100g cake flour
  • 380g butter
  • 120g cream cheese
  • 200g sugar
  • 16 large egg yolks
  • 4 egg white
  • 1 teaspoon of vanilla essence
Steps:
  1. Beat egg yolks and whites with sugar for about 30 minutes. Pour the egg mixture into an empty bowl.
  2. Mix butter with cream cheese for about 10 minutes. Add the egg mixture into the butter mixtures and mix for another 20 minutes.
  3. Then mix the flour into the mixture and mix with low speed for about 10 minutes.
  4. Set the oven to grilling mode with 180°c.
  5. Grease a 7'x7' cake tin and fit the baking paper into it. Then grease the baking paper as well.
  6. Weight 100g of the prepared batter and place the first layer onto the cake tin. Bake until it turns golden brown. (About 5 minutes)
  7. There will be some air pockets forming while you are baking, this can be flattened out using a flat metal utensil.
  8. Repeat the step above until the batter is used up.
  9. Bake the last layer for about 15 minutes.
*Care must be taken to avoid burning the layers while baking.

This is a very time consuming process but the result is well worth it. Good Luck!

珍惜

没想到今天已经星期三了。这三天都带着悲伤的心情过日子。事情就在星期一开始。。。

当天,我一起床拿起手机来看,尽然有好几封短讯。每个短讯都是我小学朋友寄来的,通知我关于我一位小学老师的事情。我看完第一个短讯后,惊讶得我马上从床上爬了起来打了几个电话。短讯里提到我老师的女儿已离开了人界。我到了Facebook后,才知道事情的真相。

她是因为爱情的挫折,结果就自杀了。我和一群小学朋友在星期日吃早餐时还有提到她没想到当晚就发生了这件事。最可怜的是我的老师,一把年纪了没想到会无端端失去了最小的女儿。星期一晚上我和我的家人就到我老师的家。进到去,眼前就看见伤心的老师抱着一个人正在哭着。那时候的我,心真的好疼,眼泪几乎要流出来。认识了老师已有15年左右了,都没看过老师这么伤心。那一刻我真的很内疚,看见老师这么伤心但我却不能做些什么东西。

虽然我不是很认识老师的女儿,但也算是朋友,说过几次话。我真的为她感到可惜。年纪这么小,为人那么好,竟然这样就结束了生命,放弃了正在等着她的美好道路和她所拥有的一切。她就是无法度过短短的那一刻。

这世界上,真的很多东西是无法预料到的。我们真的真的要会好好珍惜目前所拥有的一切如家温,友情,健康及快乐等。。。

对于这件事,有很多东西我真的无法从我心中表达出来。Haiz...

老师:希望你可更坚强。请记得你身旁还有很多人都很关心您。要好好地保重身体。我从幼稚园您就看着我长大到今天,我也把你当成我另一为妈咪了。如果有什么事情,只要你出声,我一定尽力的帮。

Gathering



Just come back from a wonderful gathering with my Tshing Nian ex-classmates at Restaurant Tai Thong. Although its was just amost 10 people(less than 1/4) attended the gathering, but it was fun to be with all of them and keep myself updated. Some of them may not changed a lot, but I can say that everyone have grown up a lot, especially Esther, the one who is getting married soon. Congratulation...

Now they are planning to have another gathering during the CNY. I may not be able to join them but I'm hereby wishing good luck to everyone. All the best...

心疼

今天8点多早上才睡觉。睡到11点多,就被身旁的电话把我从梦中叫醒。张开眼睛一看,原来是家里打来的。接了电话,一听声音就知道是我的妈咪打来的。她说:“你先在回来一下”。再听仔细一点,怎么她的声音那么怪的呢!原来刚才她是哭着跟我说话。过后我姐接过电话,知道我不在吧生,告诉我原因后,就盖下了电话。

当时的我还没完全清醒。过后,我再想回妈妈说话的那一刻,我的心也变软了,眼泪也从眼睛里流了出来。平时我很少和她谈心事,也很少陪她。当她在伤心找我的时候,我却无法在她身旁与她分享悲哀。今天也是我第一次有这种感觉。我真的觉得很不孝顺,很失败,很没用。

我也不知道今年到底是个好的开始还是不好的开始。新的一年才过了三天,就发生了这么多不开心的事。
