Thousand Layered Cheese Cake

It has been a while since my last post. Today I have made a delicious Thousand Layered Cheese Cake (Kek lapis). Since people named it thousand layered cake, it is not surprise that it has to be baked layer by layer. It took me about 4 hours for the cake to be completed. In the end, the layer of the cake was not so obvious and it seems to be over baked, making the cake a bit too dry instead of moist. However, I was satisfied with the cake even through it is so troublesome for baking it layer by layer. Now, I would like to share my recipe here. I will update the recipe if i found another better recipe... Enjoy!



Ingredients:
  • 100g cake flour
  • 380g butter
  • 120g cream cheese
  • 200g sugar
  • 16 large egg yolks
  • 4 egg white
  • 1 teaspoon of vanilla essence
Steps:
  1. Beat egg yolks and whites with sugar for about 30 minutes. Pour the egg mixture into an empty bowl.
  2. Mix butter with cream cheese for about 10 minutes. Add the egg mixture into the butter mixtures and mix for another 20 minutes.
  3. Then mix the flour into the mixture and mix with low speed for about 10 minutes.
  4. Set the oven to grilling mode with 180°c.
  5. Grease a 7'x7' cake tin and fit the baking paper into it. Then grease the baking paper as well.
  6. Weight 100g of the prepared batter and place the first layer onto the cake tin. Bake until it turns golden brown. (About 5 minutes)
  7. There will be some air pockets forming while you are baking, this can be flattened out using a flat metal utensil.
  8. Repeat the step above until the batter is used up.
  9. Bake the last layer for about 15 minutes.
*Care must be taken to avoid burning the layers while baking.

This is a very time consuming process but the result is well worth it. Good Luck!
