Christmas Fruit Cake

This is the Christmas Fruit Cake that I made for this year Christmas Party in Johor. I've been doing research and searching for the ingredients since 1 month ago. In fact, the first Christmas Cake that i tried to bake 3 weeks ago was burnt at the top of the cake.

Ingredients A (Cake):
  • 450g currants
  • 175 sultanas
  • 175 raisins
  • 50g cherries
  • 50g mix chopped peel
  • 3 tablespoon brandy
  • 225g flour
  • ½ teaspoon salt
  • ¼ teaspoon grated nutmeg
  • ½ teaspoon ground mix spice
  • 225g unsalted butter
  • 225g brown sugar
  • 4 large egg
  • 50g silvered almonds
  • 2 teaspoon black treacle / honey
  • zest of ½ lemon
  • zest of ½ orrange
  • 3 tablespoon brandy (optional)
Ingredients B (Decoration):
  • 1 egg white
  • castor sugar
  • icing sugar
  • black grapes
  • kumquats
  • cherries
  • pine cone
  • strawberries
  • pine leaves
Steps:
  1. In a large bowl, add currants, sultanas, raisins, cherries and mix chopped peel with with 3 tablespoon of brandy. Mix well and soak for 24 hours.
  2. Sift the flour into another large bowl. Add salt, grated nutmeg, and ground mix spice into the sifted flour.
  3. Break and whisk 4 large eggs into a small bowl.
  4. Add the butter & brown sugar into the blender bowl and blend until smooth and fluffy.
  5. Now, spoon in the egg mixture, a little at a time. Let it blend for another minute.
  6. Add the blended mixture to the sifted flour and spices. Fold the mixtures.
  7. Now, pour in the mixed fruits, silvered almonds, orange zest, lemon zest and black treacle. Once more, fold the ingredients well.
  8. Prepare the baking tin. Place the baking tin upside down onto the baking paper and cut 2 round baking paper(for the bottom of the tin) and a long rectangle side baking paper for the side of the baking tin.
  9. Grease the baking tin with a knob of butter. Put in the baking paper and grease that too.
  10. Spoon the cake mixture into the prepared baking tin. Then place the other circle baking paper on top of the cake mixture to keep the moisture in the cake.
  11. Place the cake into the preheat oven and bake for about 2 hours with 150°c. (time vary with different oven.)
