Chocolate Cheese Cake


Ingredients A (Base):
  • 130g crushed digestive biscuits/Marie biscuits
  • 30g brown sugar
  • 80g melted butter
Ingredients B (Filling):
  • 400g cream cheese
  • 80g caster sugar
  • 1½ tablespoon cocoa powder
  • 2 teaspoon instant coffee powder
  • 3 eggs
  • 150g whipping cream
  • 160g chocolate (melted)
Steps:
  1. To make base, stir all ingredients A until combined. Press mixture into base of 18cm (7 inches) cake tin.
  2. To make filling, beat cream cheese, sugar, cocoa powder and coffee powder until smooth. Beat in eggs, one at a time, beating well after each addition. Stir in whipping cream.
  3. Add in melted chocolate, stir until well blended. Pour filling into prepared tin.
  4. Bake in preheated oven at 170°c for 40-50 minutes or until cooked. Remove from heat and leave to cool. Chill in fridge.
  5. Decorate with chocolate scrolls and mint leaf.
