Ingredients A (Base):
- 130g crushed digestive biscuits/Marie biscuits
- 30g brown sugar
- 80g melted butter
Ingredients B (Filling):
- 400g cream cheese
- 80g caster sugar
- 1½ tablespoon cocoa powder
- 2 teaspoon instant coffee powder
- 3 eggs
- 150g whipping cream
- 160g chocolate (melted)
Steps:
- To make base, stir all ingredients A until combined. Press mixture into base of 18cm (7 inches) cake tin.
- To make filling, beat cream cheese, sugar, cocoa powder and coffee powder until smooth. Beat in eggs, one at a time, beating well after each addition. Stir in whipping cream.
- Add in melted chocolate, stir until well blended. Pour filling into prepared tin.
- Bake in preheated oven at 170°c for 40-50 minutes or until cooked. Remove from heat and leave to cool. Chill in fridge.
- Decorate with chocolate scrolls and mint leaf.
