Water Chestnut Cake (马蹄糕)
I have just made water chestnut cake. The photo above looks great, but its a failure. For some reasons, the filling just cannot turn into solid square form. I will write down all the ingredients and instructions. I will add this into my recipe once I know the perfect way to do it. Anyone who know how to do it, please let me know. Thank you. :)

Ingredients A (Bottom Filling):
  • 50g green bean powder
  • 200g sugar
  • 2½ cups water
  • 3 water chestnuts (diced)
  • 10 pieces pandan leaves (pound and squeeze juice)
Ingredients B (Top Filling):
  • 50g green bean powder
  • 500g coconut milk
  • a pinch of salt
Ingredients C (Mold):
  • Large pieces of pandan leaves (fold into square trays)
Instructions:
  • Fold the large pieces of pandan leaves into square trays.
  • Mix green bean powder and sugar with water. Stir till green bean powder and sugar are fully dissolve.
  • Pound 10 pieces of pandan leaves and squeeze into juice.
  • Pour the pandan juice into the green bean mixtures.
  • Cook with moderate heat till thick.
  • Remove from heat and add in water chestnuts.
  • Fill into pandan leave trays until half full.
  • Put all of the ingredients B into a bowl and mix well.
  • Cook ingredients B till thick.
  • Pour it into the half-fulled trays
