Virgin Egg Tarts
This is my first home made egg tarts. I started everything from scratch. Making the filling of egg tarts is easy... but the pastry itself is the most difficult part and need to spend a lot of time on it in order to make a flaky egg tart. I will share all the ingredients and steps to make egg tarts.

Ingredients A ( Pastry ):
  • 200g flour
  • 50g icing sugar
  • 100g melted butter
  • 2 eggs
Ingredients B ( Filling ):
  • 4 eggs
  • 80g sugar
  • 100ml water
  • 100ml milk
Directions:
  1. Mix all flour and icing sugar in a big bowl.
  2. Add in the butter into the bowl and mix well. Then add in 1 egg.
  3. Put the dough into freezer for about 15 minutes.
  4. Warm up the 100ml water and milk and add 80g sugar. Stir until sugar fully melt.
  5. Put the filling aside to let it cool down. Put 3 eggs into the cooled filling. (make sure is not hot)
  6. Gently grease the baking tray with some butter or oil.
  7. Cut the pastry into portions and flatten it into small rounds.
  8. Fit the small rounded pastry into the greased baking tray by pressing firmly on bottom and side.
  9. Fill the pastry with the egg mixture (Ingredients B).
  10. Bake the egg tarts at 200 degrees Celsius for 15-20 minutes until the filling turn brown.
  11. Enjoy your egg tarts with a cup of coffee.
